Greek Salad with Chickpeas (Vegan)
10 cups chopped romaine lettuce
2 cups halved cherry tomatoes
2 cups sliced cucumber
1 cup pitted kalamata olives
1 cup thinly sliced red onion
2 cans chickpeas, drained and rinsed
1 cup store-bought or homemade Greek dressing
In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, kalamata olives, red onion, and chickpeas. Drizzle with Greek dressing and toss to combine.
