Cauliflower Fried Rice (Vegan)
2 tbsp vegetable oil
5 cups cauliflower rice
2 cups frozen mixed vegetables
2 cups chopped pineapple
1/4 cup soy sauce
2 tbsp sesame oil
1/4 cup chopped green onions
Heat vegetable oil in a large skillet over medium heat. Add cauliflower rice and cook for 5 minutes, until softened. Stir in mixed vegetables and pineapple, and cook for another 5 minutes. Add soy sauce, sesame oil, and green onions, and cook until heated through.
