Grilled Vegetable and Quinoa Salad (Vegan)
5 cups cooked quinoa
2 cups grilled zucchini, sliced
2 cups grilled bell peppers, sliced
2 cups grilled eggplant, sliced
1 cup chopped fresh parsley
1/4 cup olive oil
1/4 cup lemon juice
Salt and pepper, to taste
In a large bowl, combine quinoa, grilled vegetables, and parsley. Whisk together olive oil and lemon juice, then pour over the salad. Season with salt and pepper, and toss to combine.
Serves 10
