Mediterranean Couscous Salad (Vegan)
5 cups cooked couscous
2 cups halved cherry tomatoes
2 cups sliced cucumber
1 cup pitted kalamata olives
1 cup thinly sliced red onion
1/4 cup olive oil
1/4 cup lemon juice
Salt and pepper, to taste
In a large bowl, combine couscous, cherry tomatoes, cucumber, kalamata olives, and red onion. Whisk together olive oil and lemon juice, then pour over the salad. Season with salt and pepper, and toss to combine.
Serves 10
