Quinoa Stuffed Bell Peppers (Vegan)

5 cups cooked quinoa
10 bell peppers, tops removed and seeds scooped out
2 cups chopped onion
2 cups diced tomato
2 cups cooked black beans
1 cup corn kernels
1/4 cup chopped cilantro
Salt and pepper, to taste
2 tbsp olive oil

Combine quinoa, onion, tomato, black beans, corn, and cilantro. Season with salt and pepper. Stuff the mixture into the bell peppers, drizzle with olive oil, and bake at 375°F for 30-35 minutes.
