Lentil and Vegetable Curry (Vegan)
2 cups dried green lentils, rinsed and drained
2 tbsp vegetable oil
2 onions, chopped
4 garlic cloves, minced
2 tbsp curry powder
2 cups diced carrots
2 cups diced potatoes
2 cups chopped kale
8 cups vegetable broth
Salt and pepper, to taste
In a large pot, heat oil over medium heat. Add onions and garlic, cook until soft. Stir in curry powder, carrots, and potatoes. Add lentils and vegetable broth. Bring to a boil, reduce heat, and simmer for 30-40 minutes until lentils are tender. Stir in kale, season with salt and pepper, and cook for another 5-10 minutes.
