Sweet Potato and Black Bean Tacos (Vegan)
2 tbsp olive oil
2 cups cubed sweet potatoes
2 cups black beans, drained and rinsed
1 cup chopped onion
1 cup chopped bell pepper
1 tbsp taco seasoning
20 small corn tortillas
Toppings: avocado, salsa, lime wedges
Heat olive oil in a large skillet over medium heat. Add sweet potatoes and cook until tender, about 10 minutes. Stir in black beans, onion, bell pepper, and taco seasoning. Cook until the vegetables are softened, about 5-7 minutes. Serve the mixture on corn tortillas with desired toppings.
