Vegetable and Tofu Skewers (Vegan)
2 cups cubed firm tofu
2 cups cherry tomatoes
2 cups sliced bell peppers
2 cups sliced zucchini
2 cups sliced red onion
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup balsamic vinegar
Salt and pepper, to taste
Preheat grill or grill pan to medium-high heat. Thread tofu, cherry tomatoes, bell peppers, zucchini, and red onion onto skewers. In a small bowl, whisk together olive oil, soy sauce, and balsamic vinegar. Season with salt and pepper. Brush skewers with the marinade and grill for 10-12
