Veggie and Tofu Stir-Fry with Peanut Sauce (Vegan)
2 tbsp vegetable oil
5 cups cubed firm tofu
2 cups sliced bell peppers
2 cups sliced carrots
2 cups chopped broccoli
1 cup peanut butter
1/2 cup soy sauce
1/4 cup rice vinegar
1/4 cup maple syrup
1/4 cup water
1/4 cup chopped green onions
Heat vegetable oil in a large skillet or wok over medium heat. Add tofu and cook until golden brown. Remove tofu from the skillet and set aside. Add bell peppers, carrots, and broccoli to the skillet, and cook until tender-crisp. In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, and water. Pour the peanut sauce over the vegetables and stir in tofu. Cook until heated through. Garnish with green onions and serve.
