Cauliflower Fried Rice (Vegetarian)
2 large cauliflower heads, grated or processed into rice-like texture
4 tbsp sesame oil
2 cups frozen peas and carrots
2 cups diced bell peppers
1 cup chopped green onions
10 eggs, beaten
1/2 cup soy sauce
Salt and pepper, to taste
In a large skillet or wok, heat sesame oil over medium heat. Add peas, carrots, bell peppers, and green onions. Cook for 3-4 minutes. Push vegetables to the side and scramble eggs in the skillet. Mix eggs with vegetables, add cauliflower rice, and stir in soy sauce. Cook for 5-7 minutes, seasoning with salt and pepper as needed.
