Mushroom Stroganoff (Vegetarian)
4 tbsp butter
4 cups sliced mushrooms
2 cups diced onions
4 cloves garlic, minced
4 cups vegetable broth
2 cups sour cream
1/4 cup all-purpose flour
Salt and pepper, to taste
10 cups cooked egg noodles
Melt butter in a large skillet over medium heat. Add mushrooms, onions, and garlic; cook until tender. In a bowl, whisk together vegetable broth, sour cream, and flour. Pour into the skillet, stirring to combine. Cook until thickened, about 5 minutes. Season with salt and pepper. Serve over cooked egg noodles.
