Chickpea and Spinach Stew (Vegan)

2 tbsp olive oil
2 cups chopped onion
4 cloves garlic, minced
2 tsp smoked paprika
2 tsp ground cumin
4 cups cooked chickpeas
8 cups vegetable broth
10 cups chopped fresh spinach
Salt and pepper, to taste

Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until soft and fragrant. Stir in smoked paprika and ground cumin. Add chickpeas and vegetable broth, bring to a boil, then reduce heat and simmer for 15-20 minutes. Stir in spinach, and cook for another 5 minutes until wilted. Season with salt and pepper to taste.
