Grilled Vegetable Skewers (Vegan)
5 cups chopped bell peppers
5 cups chopped zucchini
5 cups chopped red onion
5 cups cherry tomatoes
10 wooden or metal skewers
1 cup olive oil
1/2 cup balsamic vinegar
Salt and pepper, to taste
Thread the vegetables onto the skewers, alternating colors and types. Whisk together olive oil and balsamic vinegar, and brush onto the skewers. Season with salt and pepper. Grill skewers over medium heat for 10-15 minutes, turning occasionally, until vegetables are tender and slightly charred.
