Vegetable Curry (Vegan)
2 tbsp coconut oil
2 cups chopped onion
2 tbsp curry powder
2 cups cubed sweet potato
2 cups chopped bell peppers
2 cups cauliflower florets
2 cups diced tomatoes
1 can coconut milk
Salt and pepper, to taste
Heat coconut oil in a large pot over medium heat. Add onion and cook until softened. Stir in curry powder, sweet potato, bell peppers, and cauliflower. Cook for 5 minutes. Add tomatoes and coconut milk, and simmer for 20-25 minutes, until vegetables are tender. Season with salt and pepper.
